Winnow (cheese)

The Tarare is a produced cheese with Tarare in the department of the the Rhone in France with soft paste and flowered crust.

Its manufacture connects it with the Saint-marcellin. The curd drains naturally in perforated containers (cheese drainers), without pressure nor cooking. It is simply salted before drying/refining.

Its form can be round or oval, seldom rectangular.

Its artisanal production is traditional in the farms of the mounts of Winnowing machine where one manufactures according to the same method of cheeses to the goat's milk or mixed (goat and cow) called baulks.
