The Stinking bishop (" bishop puant") is an English cow's milk cheese to hard paste and washed Croûte.
Description
The stinking bishop presents an orange crust. Presenting holes, its texture is variable: it can be rather firm, or frankly crémeux, according to the season. Its diameter is of 20 centimetres, its height 4 centimetres. A part can weigh 2 kilos. Content of grease: 48%.It has a Odeur characteristic of old socks, due to washing, but its Goût surprises agreeably after the olfactive surprise.
The specialists bring closer this Fromage to the époisses French, whereas others bring it closer to the munster.
Manufacture
The crust of the stinking bishop is washed in pear brandy (Perry), more precisely of the Poire éponyme, every four weeks. The Affinage takes six to eight weeks. History
It is said that the stinking bishop is in the beginning a cheese manufactured by monks cistercians with Dymock (the United Kingdom). The Gloucester cow
