Shrimp paste

The shrimp paste is a Sauce containing Beurre prepared with crayfish S.

The crayfish are cooked with the furnace. Once cooked, they are crushed. The powder obtained is put with butter to heat with soft fire in a pan. In contact with the powder, butter takes the crayfish taste. Once quite hot, this liquid mixture passed to the sieve to the top of a cool water bowl. In contact with water, butter is solidified and become again handy for any preparation such as the Sauce Nantua.
