Saint-Georges-with-Windsor is a municipality of the Estrie which occupies the southern end of the regional Municipalité of county of the Sources, to 40 km of Sherbrooke and to 15 km in the south of Asbestos.
In 1838, three pioneers come from Bay-of-Febvre, from Point-of-Lake and Yamachiche will settle with the future site of the municipality and will mark the kickoff of its development. Saint-Georges-of-Windsor officially the day in 1852 under the name of the parish saw of Saint-Urbain-of-Windsor. Into 1860, the canton of Windsor (and thus the parish) is divided into two distinct municipalities, Windsor-and-Stoke like Saint-Georges-of-Windsor, this last name pointing out the abbot Georges-Jacques Duhaut (1825 - 1869), cleaned Wotton (1852 - 1857), who celebrates the first large-mass there after 1852 and which is at the origin of the patronage of the municipality by Saint Georges. The name Windsor which identifies also the Canton returns honor to a city of England, Windsor, to forty kilometers in the west of London, in Berkshire, where the royal family has a residence.
In 1961, part of the territory of the municipality of canton was detached to create the municipality of the homonymous village. However, on November 30th, 1994, the municipalities of village and canton were gathered again under same name. The fame of Saint-Georgeois is in particular dependant on the quality of cheese in grains which they prepare. In addition, they have a splendid panorama which characterizes the whole of the agricultural area in the middle which them medium of life was established.
The village has a cheese dairy of reputation which produces a very widespread cheese in grains.
