Pipérade

The pipérade is a traditional dish of the Basque Country. There exists also a pipérade inhabitant of Béarn. She is containing Tomate S, of Poivron S reds, ideally of the Piment soft of the Basque Country (Piment of Espelette), dependant with scrambled eggs.

The pipérade is tasted with ham of Bayonne, or cheese of ewe, without forgetting a red Vin south-west: Buzet, Madiran, Irouléguy
