The fishing is the edible Fruit produced by the Pêcher ( Prunus persica ).

Fishings fleshy, juicy and are sweetened, with a yellow flesh, white, or red (bush peach), a velvety of color pink-carmine to pink-salmon or brown skin at the bush peaches, and a hard core, not member.

History

Fishing is originating in China, according to the modern botanists, and the fruit passed to Persia and then to Europe through Asia during the Préhistoire, probably 2000 years before J. - C.

The scientific name Prunus Persica probably comes owing to the fact that Alexandre Large the which gave him its European name.

Fishing was one of the preferred fruits of Louis XIV, it made some cultivate more than 30 different varieties in its orchard with Versailles.

Varieties

The fluffy skin and the free core (not member with the flesh) distinguish fishing itself from the other varieties produced by the species Prunus persica : “fishings pavie” with fluffy skin and adherent core (and of this fact less appreciated), and varieties with smooth skin: “Nectarine S” (with adherent core) and “Nectarine S” (with free core).

There exist also fishings of flattened form called " fish punt of China " or " Pentoo" (of Chinese " Side Tao" meaning " Fish of Paradis") or " Doughnut peach" in English (because of its resemblance to a fritter).

Flavors of fishing

The Arôme of fishing is due to the combination of more than 80 substances, more or less volatile. Fishing contains the following flavors: Gamma-lactone S in C6 (gamma-hexalactone), C8 and C10 (gamma-decalactone), Delta-lactone in C10 (delta-decalactone), like various Ester S, Acid S, alcohol S, and of the Benzaldéhyde.

Production

In 2005, the world annual production of fishings and Nectarine S is approximately 17 million tons is more than 64% of increase over the 10 last years (mainly related to the tripling of the Chinese production over the same period).

55% of the production are used by industry (to the 3/4 to be put limps about it) and 45% are consumed in fresh produce.

Fishing is a fruit which supports transport badly; the industrialization of agriculture, the need for producing less expensive, changed the product: one often finds fishings hard and not very goûteuses.

  • In France, the Roussillon is the first department to produce fruits of quality; the Provence, more industrial, ensures of acceptable volumes. These two entities ensure the majority of volumes in France, subjected to standards of Draconian hygiene and respect of the environment.
