Fine fat of Mézenc

The fine fat of Mézenc is a food agro AOC.

Historical origin

Formerly, the ox of Easter was fattened all the winter with hay at will and a ration of cereals produced on the farm. It was cut down in spring. The race mézine, disappeared today, was well adapted to this production.
Cette old tradition again is developed by a request for recognition in AOC formulated in 1995 and obtained on March 27th 2006. The old reputation related to the pieces with long cooking: pot with fire in particular. The evolution of the kitchen makes that the morceux ones to roast are also rented for their great gustatory quality.

Breeding

It at least relates to the bovine meat of heifer 24 months old and of 30 castrated month old males minimum, raised on the plate of the Mézenc, in the part is department of Haute-Loire and west of the Ardèche.
Elle relates to the bovine races aubrac, Charolaise, limousine and salers. The animals resulting from the crossing of these races and crossing between mother abundance and Montbéliarde and Limousin father or charolais is also authorized.

Food

The animals are nourished in natural pasture (varied particular flora of the area of production, in particular the cistre or fennel of the Alps) and of hay resulting from harvest on local natural meadows. A proteinic complement can be given. Its composition answers a precise schedule of conditions. The ensilage is prohibited. The fattening is done in 110 minimum days, with the cattle shed, with hay at will and a complement which should not cause a too fast catch of weight.

Preparation

Demolition must be made without stress. The carcass must weigh a minimum of 280 kg (heifers) and 320 kg (oxen). They are noted and possibly withdrawn if considered to be nonin conformity. The approved carcasses are plugged mention " FGM". Cutting is done only at the time of the sale to the ultimate consumer.

Product

The meat is finely spotted and has a single savor.
C' is a seasonal product, from March to June.
