Change of state
In Thermodynamic, a change of state is a Transition from phase at the time of the passage of a state of the matter to another. The three principal states of the matter are: solid, Liquid, Gas.
The parameters fixing the change of state of a pure substance are the pressure and the temperature.
With atmospheric pressure, water is solid for a temperature lower than 0° C, liquid for a temperature ranging between 0°C and 100°C, and with the gas state for higher temperatures. With lower pressure, the change of state occurs for lower temperatures. Thus, water boils at a temperature lower than 100° C in mountain because the pressure decreases with altitude.
