It sold its cakes on the station platforms of Bourgoin, while singing “They are hot the chaudelets, they are hot”. The chaudelet is a small wafer of pie crust pastry salted, aromatized grains of anise. Kneaded a long time, the paste is formatted, then poached with the water ebullient and cooled with cool water. The wafers then are drained and put at the expenses several hours. They are then cooked and gilded in a furnace with very sharp fire. Frederic Dard, who appreciated them, spoke about it in his books and did not fail to make of it provision with each one of its passages to Bourgoin-Jallieu.

October 18th, 1447, Louis II Dolphin of France, enters in Bourgoin by the New Door assembled on a superb black horse. He is followed of forty riders ; thirty archers and ten principal rafters. Then the Court and the house come from the Dolphin : rich person gentlemen carrying escutcheon armorié on the chest. The future king Louis XI will remain on several occasions in Bourgoin and it is in its honor that the bakers prepared a cake in the shape of crown, composed of flour, milk, honey, eggs and leaven, and decorated with dress and of white sugar.
